I'm enjoying reading excerpts from "Memories of Philippine Kitchens", the new coffeetable book of Filipino recipes and food from New York-based Fil-Am restaurateurs Amy Besa and Romy Dorotan. Unearth the rich culture of Philippine cuisine as "Memories of Philippine Kitchens" co-author and Philippine-born, New York-based restaurateur Amy Besa gives an informative talk about the topic and also signs copies of her book in Powerbooks Greenbelt on January 27 at 5 pm.
Besa and husband, chef Romy Dorotan, are the owners of the popular Filipino restaurant Cendrillon located in the upscale SoHo district. Established in 1995, Cendrillon is regarded by food connoisseurs as one of the best Pan-Asian restaurants in New York, earning positive reviews and features from various publications such as the New York Times, Wall Street Journal, Vanity Fair, Gourmet Magazine and New York Magazine.
The couple's book, Memories of Philippine Kitchens, is the most comprehensive guide to the history of Filipino cuisine and Filipino cooking methods ever compiled. It features over a 100 recipes of Dorotan's updated versions of classic Filipino dishes that have impressed the diners of their restaurant. Besa complements her husband's culinary expertise with her narratives that document and trace the history of Filipino home cooking, from native dishes to dishes that show the country's multi-racial influences, and her recollections of growing up in the Philippines. Making the book more visually appealing are the 200 full-color photographs taken by respected photographer Neal Oshima.
